Every once in a while you have to get a little fancy so I decided to make Shepard’s Pie and Irish Soda Bread and I am here to share the recipes!
Meat Topping:
- 2 tablespoons olive oil
- 1 cup chopped yellow onion
- 1 lb. 90% lean ground beef -or ground lamb
- 2 teaspoons dried parsley leaves
- 1 teaspoon dried rosemary leaves
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon Worcestershire sauce
- 2 garlic cloves -minced
- 2 tablespoons all purpose flour
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 cup frozen mixed peas & carrots*
- 1/2 cup frozen corn kernels
Mashed Potato’s:
- 1 1/2 – 2 lb. russet potatoes -about 2 large potatoes peeled and cut into 1 inch cubes
- 8 tablespoons unsalted butter -1 stick
- 1/3 cup half & half
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup parmesan cheese
Put the meat filling in a dish with the potato’s on top and bake at 400 for 20 mins!
Irish Soda Bread:
- 1 and 3/4 cups buttermilk
- 1 large egg(optional, see note)
- 4 and 1/4 cups all-purpose flour (spoon & leveled), plus more for your hands and counter
- 3 Tablespoons granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 5 Tablespoons (70g) unsalted butter, cold and cubed*
- 1 cup (150g) raisins
- mix together dry ingredients then add wet ingredients
- cut an ‘X’ in your dough – I cut mine a little deep!
- bake at 425 for 30 mins
